The Bloom on the egg is a natural protective barrier that prevents bacteria from entering the egg. Most producers wash their eggs which removes this protective barrier requiring eggs to be refrigerated. We chose not to wash our eggs in order to leave this natural barrier in tact. Unwashed eggs can last unrefrigerated for 3-6 weeks. When you get our eggs they have been layed within 7 days.
